Microgreens generally contain 4 to 40 times more vitamins and nutrients than the same weight of their mature counterparts. A small handful can deliver what would otherwise take a much larger serving of the full-grown vegetable. The landmark USDA study found that across 25 varieties, microgreens averaged about 5 times the vitamin and carotenoid content of mature leaves.

Broccoli — The nutritional powerhouse of the group. Highest total antioxidant content among common microgreens (825 mg GAE/100g). Rich in vitamins A, B, C, and K, plus iron, magnesium, and phosphorus. Contains sulforaphane, a compound linked to anti-inflammatory and cancer-preventive properties. Often cited as having the most complete nutrient profile of any microgreen.
Sunflower — One of the most popular to grow and eat. High in vitamin E, A, and B complex. Contains over 200% of the daily iron requirement per serving. Good source of magnesium, calcium, and zinc. Also has a great nutty flavor that customers love.
Radish — Second-highest antioxidant content behind broccoli. Good source of magnesium, zinc, and phosphorus. Peppery flavor makes it a standout for chefs and home cooks. Fast grower (5-7 days to harvest).
Pea Shoots — Excellent source of B vitamins (B1, B2, B3, B6, B9/folate). Double the iron, phosphorus, and magnesium concentration of broccoli microgreens. High in vitamin C (~71 mg/100g). Mild, sweet flavor that's approachable for people new to microgreens.

Vitamin C — Ranges from 20 to 147 mg per 100g depending on variety. Red cabbage microgreens are the highest.
Vitamin E — Red cabbage microgreens have up to 40x the vitamin E of the mature plant. Sunflower is also excellent.
Vitamin K — Garnet amaranth microgreens are the richest source. Important for blood clotting and bone health.
Carotenoids (beta-carotene, lutein) — Cilantro microgreens are the standout here. These convert to vitamin A and support eye health.

A living tray is a full tray of microgreens sold with the roots still intact in the growing medium — you get the whole tray as-is, still alive and growing. Instead of pre-cut greens in a bag or clamshell, you harvest what you need yourself by snipping with scissors, and the rest stays fresh and living until you're ready for it.
The main benefit is freshness. Pre-cut microgreens start losing nutritional value and wilting as soon as they're harvested. A living tray stays fresh on your countertop for days longer because the greens are still alive and drawing moisture from the roots. You're essentially getting the freshest possible product — you're the one doing the final harvest, right before you eat it.
